These robust cooking tools are remarkably simple, crafted from an alloy of iron, carbon, and silicon, then ground smooth and often pre-seasoned. While designs and prices vary, all cast iron skillets are fundamentally solid pieces of metal, devoid of complex cladding or nonstick coatings. This inherent simplicity makes them excellent at retaining heat, ideal for tasks such as searing steaks or cauliflower, baking cornbread with perfectly crisp edges, or shallow-frying chicken. Their durability is unmatched; they can withstand the rigors of grilling or even cooking over an open fire without showing signs of wear.

Choosing the right cast iron skillet often comes down to personal preference, considering factors like price, surface texture (smooth or pebbled), and size. Our extensive testing, involving 15 different models, aimed to identify the best options for both seasoned cast iron users and those new to its charms. We evaluated pans on heat conduction, non-stick properties through frying eggs, searing capability for steaks, and evenness in baking cornbread, all while comparing them against a control enameled cast iron skillet. The findings revealed that while heat conduction rates varied slightly among pans, all performed admirably in cooking tasks, suggesting that personal comfort with weight and handle design often trumps subtle differences in heat distribution.

Cast iron skillets are often misunderstood, perceived as high-maintenance or delicate. However, this is largely unfounded. Unlike nonstick pans with sensitive coatings, cast iron can withstand metal utensils without damage. While proper drying and a light oil coating after washing are necessary to prevent rust, this adds only minimal time to cleanup. Even if rust appears, it's easily remedied with steel wool and re-seasoning. This resilience makes cast iron a forgiving and dependable cooking companion, encouraging users to overcome any initial hesitations.

Beyond culinary performance, cooking with cast iron offers health benefits. Registered dietitian Brierley Horton notes that cooking in cast iron can significantly increase the iron content of foods, aiding in the body's oxygen transport, muscle metabolism, and hormone production. Furthermore, cast iron is a non-toxic option, free from PTFE and other chemical coatings found in many nonstick alternatives, relying instead on a natural, polymerized oil patina for its nonstick qualities. This combination of durability, versatility, health benefits, and ease of care makes cast iron an invaluable and positive addition to any kitchen, promising years of reliable service and delicious meals.
